Nobu Kuala Lumpur Welcomes Chef Toshiyuki Shiramizu for a Month of Seasonal Specialties

July offers a rare reason to book ahead at Nobu Kuala Lumpur. For one month only, the restaurant is presenting Osusume by Chef Toshiyuki, a seasonal menu curated by Nobu's Corporate Sushi Chef, Toshiyuki Shiramizu, available from 1 to 31 July 2026.

Adding to the occasion, Chef Toshiyuki will be in residence at Nobu Kuala Lumpur from 3 to 8 July, offering guests a rare opportunity to experience the culinary philosophy and craftsmanship behind the menu firsthand.

Known for a refined approach to Japanese-Peruvian cuisine, the menu reflects the qualities that have become synonymous with the Nobu name: exceptional ingredients, balanced flavours, and precise execution.

The Osusume selection opens with a series of cold dishes that showcase both refinement and restraint. Highlights include Zuke Maguro Uni Tempura with ikura and shishito pepper, Tai Sweet Relish finished with caviar and soy salt, Albacore Orange Olive paired with crispy baby artichoke and truffle oil, and Sawara Yuzu Kosho complemented by masago arare, amazu tosazu, and aji amarillo aioli.

Rather than relying on complexity for its own sake, the menu focuses on bringing out the character of each ingredient. Bright citrus notes, delicate textures, and subtle layers of umami come together in dishes that feel carefully composed yet effortlessly balanced.
