Growing up in Kajang, satay was an event, not just a meal,” he recalls. His version? Australian grain-fed tenderloin, grilled over a controlled charcoal flame to achieve peak tenderness and that signature smokiness.

If it’s wok-fired drama you’re after, Penang Marriott Hotel’s Chef Lee Keen Suaan delivers Char Koay Teow that’s packed with wok hei—that elusive, smoky breath of the wok. “Duck egg and lap cheong elevate the dish, but it’s all about the fire control,” he explains.

And let’s not forget Sarawak Laksa, a dish that Aloft Kuala Lumpur’s Chef Elossa Danette holds close to her heart. “My grandmother taught me how to make this. It’s a dish that speaks of heritage, community, and culture,” she says. Her version stays true to its roots, featuring a deeply aromatic broth slow-simmered with prawn and chicken stock, finished with coconut milk and served with sambal belacan for an extra kick.
